Spring has sprung!
Spring weather brings out the salad recipes. Kerry Scheller brought a family favorite to a recent community potluck meal, and I received many requests to get the recipe. Kerry’s children and friends named this savory salad, Mama Scheller’s Chicken Salad. Curry is the seasoning and, paired with the tang of pineapple, it gives the mixture subtle flavor surprises along with the crunch of cashews and red onion.
