Mac-n-Cheese, a favorite of most kids and many adults, and a staple side dish on most southern cooking menus, has increased in popularity nation wide. Often, one of the first things kids learn to cook is boxed macaroni and cheese. Easy, salty and addictive. In our last session of Go Odessa Summer Recreation cooking class, we made Macaroni and Cheese. The younger group used a boxed mix with macaroni cooked and chilled ahead of time, so only low-heat, stove-top cooking was...

The annual potluck dinner, with burgers and hot dogs supplied by the Odessa Community Ministerial Association, followed by softball, came close to being rained out, but turned out pleasantly enough, with no one getting wet. Participants and spectators alike appeared to enjoy themselves, especially after it became obvious that the dark, threatening rain cloud was moving away from Odessa, rather than toward it. If you have not participated up to now, you have been missing a... Full story

Her name was Ollie (short for Olivia), and she came into our lives seven years ago in the summer of 2012. She was half poodle, half shih tzu. We had tossed around the idea of getting a dog, though such a small one had never entered our minds. But once we met Ollie, we were hers. There was no...

On Saturday, July 13, the 1999 graduating class of Odessa High School gathered at Reiman Park for a family picnic. Sundi (Schmierer) Camp worked for months pulling this together. Many who traveled very far could not come had it been held during the weekend of the alumni banquet, so they chose a date of their own. There was also an evening gathering at Rocky Coulee Brewery, owned by classmate Zach Schafer, where a few more joined the group. Information for this article was...

It's just after 4:30 p.m. on June 27, and I am sitting in the crowded Phoenix airport with my mom Edith and daughter Kaitlyn, waiting for our 5:25 p.m. flight to Seattle to start boarding. We will be among the first to board due to the fact that my mom requires a wheelchair to get from point a to point b when longer distances are involved. There are both pros and cons to flying with someone who requires a wheelchair. The pros: 1. You get to withstand the dirty looks from... Full story

One thing can be said about Odessa weather of late, it’s changeable. The weather leading up to grain harvest is often like this. Shall I make salad or soup for the days meals? Will it be hot or chilly come meal time? I had a request for baked chimichangas and these easy to eat out of hand crisp burritos are tasty no matter the weather. Some internet searching, came up with two chicken based versions. Chicken and Bean Chimichangas comes from the website, Tastes Better From S...

Nate Lathrop has recently started a Guitar Ministry For Kids for the specific purpose of helping Odessa kids obtain guitars. Anything to help kids keep occupied with a wholesome activity, and perhaps even induce them to put down the computer or phone for a minute or so. Vacation Bible School has been happening this week. Some of the program focused on customs of other countries. I have a couple of recipes from countries of my own heritage to share with you. Raisin Tarts, or Fly Pies, as my dad used to call them, come from Inverness, Scotland. Use your favorite pie crust recipe to line the tins. The recipe is so old, it gives wood stove baking instruction (bake slowly) but no given temperature. Inverness Raisin Tarts (Fly Pies) Flakey pastry...

To the Editor: As I grow older, I have learned to enjoy every second of every minute of life left, more than ever! The day is what you make of it! Listening to children with terminal illnesses can teach you a lot. Being a six-year survivor of liver disease, every day is a good day, some are just better then others! Nothing is hopeless! Never give up! Even when your chance for survival in 90 days is .06 percent of one percent. So if you just keep smiling, even though life sucks, it’s contagious, and you can make others s... To the Editor: May is Skin Cancer Awareness Month, and may my story inspire you to health. I lost a friend to undiagnosed skin cancer, and that event saved me. I started going to a dermatologist and in May 1990 I was diagnosed with a malignant melanoma that needed immediate care. I had surgery in June which found that the skin cancer had grown down to my heart. Unable to know if all of the cancer was removed, I took an early retirement. I am still around 27 years later thanks to early detection. Things you should know about s... Full story
