Nate Lathrop has recently started a Guitar Ministry For Kids for the specific purpose of helping Odessa kids obtain guitars. Anything to help kids keep occupied with a wholesome activity, and perhaps even induce them to put down the computer or phone for a minute or so. Vacation Bible School has been happening this week. Some of the program focused on customs of other countries. I have a couple of recipes from countries of my own heritage to share with you. Raisin Tarts, or Fly Pies, as my dad used to call them, come from Inverness, Scotland. Use your favorite pie crust recipe to line the tins. Vacation Bible School or VBS will be held June 17-21 at Foursquare Church and Heritage Church in Odessa. Children from four years old up through completion of eighth grade are invited to attend. The program is funded through donations, so there is no cost. All children in the community are welcome to attend and need not be members of any specific church. To the Editor: May is Skin Cancer Awareness Month, and may my story inspire you to health. I lost a friend to undiagnosed skin cancer, and that event saved me. I started going to a dermatologist and in May 1990 I was diagnosed with a malignant melanoma that needed immediate care. I had surgery in June which found that the skin cancer had grown down to my heart. Unable to know if all of the cancer was removed, I took an early retirement. Monday, May 27, Odessa Veterans of Foreign Wars Post #7395 and Odessa American Legion Post #105 will perform Memorial Day services starting at the nursing home beginning at 10 a.m., followed by a service at the Odessa Cemetery Chapel at 11 a.m. The services will include a flag salute and dedication for deceased veterans Keith Luxner, Loren Totusek, Dale Jacobson, Charles Luxner and James Larson. Fresh strawberries and rhubarb has our mouth watering for all things summer. Blueberries and raspberries cannot be far behind. Though berries are available year round, shipped in from southern climates, locally grown is always best, even frozen for later use. A family of soon to be 15 members has recently taken up residence in the backyard of Tammy Tokas. A male and female quail have built a nest beneath Karen Carlson's (Tokas' sister) outdoor chimenea and laid 13 eggs. When the weather starts warming up it's not uncommon for Karen to build a fire so she and Tammy can sit outside and enjoy it. Lots of recipe requests came in from a recent community potluck meal. Kerry Scheller brought Mexican Corn Bread Salad to the event and she received many requests for the recipe and chose to share it here. The secret to this recipe, I believe, is corn bread muffins. They have more crust surface and this makes the salad more substantial, not soggy as some cornbread salads get when they sit for awhile.
