Two unusual recipes were submitted over the past couple of weeks. The first comes from Judy Scrupps, her response to my request for favorite zucchini recipes. She explained that it was a casserole but it turned out in a loaf that you sliced. This savory Zucchini Casserole loaf has a firm quiche/bread like texture and is easy to prepare. It may be served warm or cold, and I found the little bit leftover was good lightly toasted the next day. Zucchini Casserole (loaf) 2 cups...

Lovely, just ripe, peaches tempted me at the market this week. Remembering that I had saved an unusual peach based recipe from Better Homes and Garden Magazine, I purchased six and proceeded to make Cheesecake-Stuffed Peaches. The recipe is attributed to Dee Guelcher of Acworth, Georgia. Several cooking websites sent out email reminders that this is National Cheesecake Week. The hour or so baking time for traditional cheesecake seems a bit daunting during August heat, but...

“We all stumble in many ways. If anyone is never at fault in what he says, he is a perfect man, able to keep his whole body in check.” (James 3:2) As I was thinking about this and what standards we put on ourselves as people and even as Christians, I thought how many times I fail to meet the standard that I have set up for myself. Then I get down on myself because I am not able to meet my self-imposed standard. I wonder if God just laughs at us sometimes, wondering why we do this to ourselves. God is looking at the heart and...

Do you still believe in magic? I know once you surely did. For you believed in Santa Claus, when you were a kid. Yeah, you believed in Rudolph, and do you just suppose, He really guided Santa’s sleigh, with his bright red nose? Yes, you once believed these myths, and in the Easter Bunny, And in the fabled tooth fairy, who always left you money. Magic tales were just accepted, and it wasn’t a big deal. But now that you are grown up, does magic seem that real? Is this a world of fantasy; does magic actually exist? I know of man...

Odessa’s premier Deutschesfest attraction, the Oom Pas and Mas German band, was invited to perform for the Germans from Russia Heritage Society’s annual convention at Spokane’s Davenport Hotel Saturday, July 24. Zucchini proves out again to be the one thing you can grow anywhere under just about any set of conditions. Soon, most of us will have had our fill of sautéed young zucchini and chilled sliced zucchini dipped in ranch dressing, and will be scouting around for new ideas to use up this summer bounty. Cindi Bell left me a large packet of recipes for zucchini, including her fabulous Zucchini Banana Bread, before she moved this spring. There are enough recipes to make a small book,...

Wim Kuipers, a contact of Lathrop’s in Holland, has made a professional recording of the song. He now wants the bar crowd to perform to the recording for a music video. Kuipe...

Editor’s note: In case you missed our recent story on a swarm of bees that landed in the roadway near Christ Lutheran Church, here is another bee story, this one submitted by Odessa’s Kathie Donahue. When I awoke the other morning, tears were falling from the sky. Gray clouds were truly sobbing, yes, I saw the heavens cry! Fresh aromatic fragrance, the air pristine and clear, As Mother Nature bathed herself, and cleansed the atmosphere. The parched earth was so thankful, as moisture quenched a thirst. The awful drought had been severe, one the very --- worst. Sprouts of wheat were smiling, on rolling slopes of grain, Their shoots, now stretching skyward, to swallow in the rain. Wild flowers in the pasture, one could...
Hi, Odessa Record, Here's another epistle, which is "Aged" for printing, should you desire. So many do not realize how wealthy they are, living in this blessed country, even though they consider themselves poor. Yes, even those who receive welfare and food stamps are filthy rich compared to the billions who live in other parts of the world and live in cardboard and rusted out corrugated sheet metal one room shanties and who have to cook their meals over an open fire on the ground. Yes --- America is truly "The Promised Land"...

Ginger Snaps 3/4 cup shortening 1 cup brown sugar, packed 1 egg 1/4 cup black strap molasses 2 cups flour, sifted 1/4 tsp salt 2 tsp baking soda 1 tsp each ground ginger, cinnamon and cloves Granulated sugar f...

What is freedom? Ask a person and they will often say it is freedom from something. What we often forget is that it is also freedom to do something such as believe as we see fit or to disagree with our government without going to jail. It is also something that is given by God not by our government. Rights and freedoms are God given not government given for if a right is given by man (a government) it can be taken away by man. If however, a right is given by God man has no right to take it away. This is something to remember...
